Tahiti Blondies
- 1 1/2 cups flour
- 1 1/2 cups light brown sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup butter melted
- 2 large eggs
- 3 teaspoons vanilla
- 1 cup pecans chopped
- 1 1/2 cups shredded coconut separated reserve 1/2 cup for top
- 1/2 cup semi sweet chocolate chips
- 1/2 cup white chocolate chips
- 1/4 cup crushed pineapple drained
- Preheat oven to 350 degrees and line a 9 x 13 baking pan with parchment paper, or grease and flour the pan.
- In a medium bowl, whisk together flour, baking powder and salt, set aside.
- In another bowl, whisk together butter and brown sugar until combined. Add eggs and vanilla to mixture and mix well. Take the dry ingredients and fold into wet ingredients until combined.
- Fold in chocolates, coconut, pineapple and pecans into batter. Try not to over mix. Pour batter into prepared baking pan and smooth out with a spatula or spoon. Top with extra coconut, chocolate and pecans (optional).
- Bake for about 30 minutes, or until the top is a light golden brown. Do not over bake! Cool to room temperature before cutting.
