Parfait Pie
- 1 (9-inch) pastry shell, baked
- 1 envelope unflavored gelatin
- 1/2 c. grapefruit juice (red)
- 2 Tbsp. sugar
- 1/2 c. whipped heavy cream
- 1 c. red grapefruit sections
- 2 c. red grapefruit sections, cut in pieces
- 1 pt. vanilla ice cream, melted
- 2 egg whites
- 1 c. pecan pieces
- Prepare pastry shell.
- In saucepan, mix gelatin with grapefruit juice.
- Let stand 1 minute.
- Stir over low heat until gelatin is completely dissolved; remove from heat.
- Stir in ice cream; chill, stirring occasionally until mixture is consistency of unbeaten egg whites.
- Beat egg whites until peaks form; slowly add sugar and beat until stiff.
- Pour in gelatin mixture, grapefruit sections and pecans.
- Pour into shell.
- Garnish with grapefruit, pecans and whipped cream.
