Snow Stars
- 3 egg whites
- 2 tablespoons lemon juice
- 1 3/4 cups sugar granulated
- 1 cup orange zest
- 2 3/4 cups almonds ground
- 2 teaspoons cinnamon ground
- 2 tablespoons olive oil to grease the baking tray
- Whisk the egg whites with the lemon juice until stiff foam, gradually add the sugar, then whisk it on the hot water bath to make it firm. Set aside one third of the meringue.
- Stir in the mixed peel, cinnamon, and ground almonds into the rest of meringue, make a stiff dough. Cover with cling film and chill (or put in the freezer for several minutes) until the firm dough.
- Roll out the dough to 1 cm thick layer on the dusted table with ground almonds. If rolling is not possible, press the dough with fingers to make a layer. Using a star cutter, cut out stars, if needed re-rolling the paste.
- Using a confectionery bag, spread the remaining meringue over the top of each star, ease the spreading using a small knife.
- Using the knife, place carefully the stars on the greased rack and then into a pre-heated oven at 180 oC (356 oF) and bake the stars for about 10 min. until the bottom of the stars turning brown but the meringue should stay white.
