Orange & Poppy Seed Tea Cake
- 1/4 cup poppy seeds black
- 3/4 cup full cream milk
- 200 grams unsalted butter softened
- 1 orange rind zested with microplane
- 1/2 teaspoon vanilla bean paste
- 1/2 cup orange juice
- 3/4 cup caster sugar
- 3 eggs
- 2 cups plain flour
- 1 1/2 teaspoons baking powder
- 250 grams cream cheese softened
- 1/4 cup unsalted butter softened
- 1/2 teaspoon vanilla bean paste
- 2 cups icing sugar soft, sifted, confectioner or powder sugar
- 1 tablespoon orange rind
- Preheat oven to 320 degrees F, butter or line an 8" round cake pan with parchement
- Mix poppy seeds and milk, set aside. Place butter, orange rind, vanilla paste, and sugar into a bowl and beat with an electric mixer until light, creamy and pale in color.
- Add eggs one at a time, mixing between each one. Add sifted flour & baking powder slowly.
- Mix in milk and poppy seed mixture, orange juice and mix until ingredients are just combined.
- Pour into prepared cake pan and bake for 50-60 minutes, or until cake tested with a skewer comes out clean.
- While the cake is cooling, prepare the cream cheese icing by beating the cream cheese, butter and vanilla paste until smooth.
- Add icing sugar 1/2 cup at a time so as not to get sugar everywhere, finally add the orange rind and combine.
- Ice the cake once it is cooled down and enjoy with a cup of tea!
