Spaghetti With Langostines And Homemade Tomato Sauce
- 1 onion
- red pepper small piece
- 2 pear tomatoes
- 6 1/3 ounces long pasta
- 9/16 pound langostines
- salt
- ground black pepper
- extra-virgin olive oil
- sage
- For the tomato sauce, finely dice onion and pepper and fry in a little oil.
- When they are half cooked, add the two previously peeled and diced pear tomatoes.
- Let cook until sauce reduces by about 2/3 and tomato thickens.
- Season with salt and pepper and set aside.
- Bring water to boil in a large pan.
- Add langostines and cook for 2-3 minutes.
- Remove from water. In that same water, boil the pasta according to package directions and drain well.
- Peel langostines.
- In a bowl, mix pasta with tomato sauce and langostines. If desired, add a little sage.
