Baked Sausage Hash With Eggs

  1. Cook potatoes, drain and pat dry with paper towel.
  2. Remove the casings from sausage.
  3. Cook sausage in a large skillet until browned, stirring to crumble; drain well and set aside.
  4. Melt butter in skillet over medium heat.
  5. Add potatoes and onion; saute until the onion is tender.
  6. Add bell pepper and mushrooms; saute 3 to 4 minutes.
  7. Stir in reserved sausage.
  8. Transfer mixture to 12 x 8-inch baking dish.
