Baked Sausage Hash With Eggs
- 4 medium potatoes, peeled and cubed
- 1 1/2 lb. hot Italian sausage
- 1/3 c. butter or margarine
- 1 large onion, chopped
- 1 large green bell pepper, chopped
- 1/2 lb. sliced fresh mushrooms
- 1/2 c. half and half
- 1 c. shredded Monterey Jack cheese
- 1/4 c. sliced green onion with tops
- 1/4 c. minced fresh parsley
- Cook potatoes, drain and pat dry with paper towel.
- Remove the casings from sausage.
- Cook sausage in a large skillet until browned, stirring to crumble; drain well and set aside.
- Melt butter in skillet over medium heat.
- Add potatoes and onion; saute until the onion is tender.
- Add bell pepper and mushrooms; saute 3 to 4 minutes.
- Stir in reserved sausage.
- Transfer mixture to 12 x 8-inch baking dish.
