Healthy Whole Wheat Cinnamon Roll Pancakes

  1. Combine first amount of (2 tbsp) Greek yoghurt, applesauce, (2 tbsp) brown sugar, and turbinado sugar in mixer. Add eggs and (2 tsp) vanilla, mix completely.
  2. Slowly add all-purpose flour, whole wheat flour, cinnamon, baking powder, cardamom, and - if desired - a pinch of salt.
  3. Add milk, mix, and let rest.
  4. Combine second amount of brown sugar (1 tbsp) and cinnamon (1/4 tsp). Reserve.
  5. Using a hand mixer, mix together (4 tbsp) Greek yoghurt, powdered sugar, (2 tbsp) milk, (1/4 tsp) vanilla, and maple syrup. Set aside.
  6. Heat a pan on stove over medium-low heat. It will be ready when water dropped onto it immediately bubbles. When hot, spray with nonstick spray and add desired amount of batter.
  7. Sprinkle brown sugar cinnamon mixture on pancake. Flip pancakes when bubbles are throughout and begin to pop (1-2 minutes). Spray pan when you have lifted pancake, if possible. Cook for about 30-60 seconds longer.
  8. Repeat for all batter, remembering to continuously spray pan. You can cook as many as can fit at a time.
  9. Top with icing and serve hot.
