Fried Scones - Sopapillas
- 1/2 cup lukewarm water
- 1 1/4 teaspoons active dry yeast
- 1 teaspoon sugar
- 1 1/4 cups flour
- 1 teaspoon salt
- 1 tablespoon olive oil
- 4 tablespoons butter at room temperature
- liquid honey
- icing sugar
- 1 bottle oil for frying
- Make the dough:nnto the bowl of your stand mixer with the dough hook attachment, add the water, yeast and sugar, stir and let the yeast activate, about 10 minutesnnInto the bowl of your stand mixer, add the flour, salt and olive oil and start to knead at medium speed until the sides of bowl get cleaned, this is a very soft doughnnLightly oil a large bowl, add the dough and let double in volume about 1/2 an hour
- Fry the dough:nnto a wok or saucepan with heavy bottom, add the oil, about heat the frying oil, you need the bath to be about 3 inches (7cm) deep, heat the oil to about 360u0b0F (182C) and try to maintain this temperaturennLightly deflate the dough with your fingersnnFlour your hands and grab small pieces of dough, flatten them and give them a round shape, no need to be precisennCarefully dip the pieces of dough into the frying oil and fry until they are puffed and golden on both sides, about 2 minutes per sidennGather the scones and lay them on a large dish, butter them immediately on both side
- Before serving:nefore serving, drizzle some liquid honey and sprinkle with icing sugar
