Mexican Chocolate Waffles

  1. COMBINE flour, cocoa powder, sugar, cinnamon, baking soda, baking powder, cayenne pepper and salt in medium bowl, stirring until well blended.
  2. BEAT egg white in medium bowl with electric mixer on high speed until stiff. Whisk buttermilk and egg yolk in a separate bowl until blended.
  3. MAKE a well in center of flour mixture. Add shortening and buttermilk mixture, stirring until thoroughly moistened. Stir in chocolate chips. Fold in beaten egg white.
  4. COAT waffle iron with no-stick cooking spray and heat to medium temperature. Spoon or ladle batter onto waffle iron. Cook 3 to 4 minutes according to manufacturer's directions, or until golden brown. Remove from waffle iron. Repeat to cook remaining waffles. Serve topped with fresh fruit, if desired. Drizzle with sweetened condensed milk.
