Passionfruit Curd, Lime Curd And Blood Orange Curd
- 5 passionfruit pulp scooped out
- 1/3 cup lemon juice
- 3/4 cup sugar
- 13 tablespoons unsalted butter cubed
- 4 large eggs lightly beaten, strained through a sieve
- 1 cup sugar

- For the passionfruit curd, combine ingredients in a medium heatproof bowl over a medium saucepan of simmering water. Stir until mixture thickly coats the back of a wooden spoon. Remove from heat immediately.
- Cool bowl in sink of cold water, stirring occasionally, for 10 mins, to stop cooking process. Pour into hot sterilized jars and seal.
- For the lime curd, combine all ingredients except zest and food coloring in a medium heatproof bowl and prepare as per passionfruit curd. Stir in zest and coloring before pouring into jars.
- For the blood orange curd, combine all ingredients except zest in a medium heatproof bowl and prepare as per passionfruit curd. Stir in zest before pouring into jars.
