Beef And Bean Nachos
- 2 tablespoons sunflower oil
- 7/8 pound minced beef
- 1 onion medium, diced
- 1 teaspoon sweet paprika
- 1/2 teaspoon hot chilli powder
- 1 2/3 cups kidney beans drained and rinsed
- 1 5/8 cups baked beans
- 1 tablespoon tomato puree
- 1 2/3 cups chilli flavoured tortilla chips
- 7 tablespoons gouda grated
- creme fraiche to serve
- Preheat the oven to 400u0b0F. Heat the oil in a large frying pan, add the beef and fry over a high heat for 2-3 mins, stirring. Mix in the onion and continue to cook for 2-3 mins. Mix in the paprika and chili powder, season with salt.
- Mix the kidney beans, baked beans, and tomato paste into the frying pan and saute for 2-3 mins.
- Arrange the tortilla chips in an oven-proof tray. Spoon over the beef mixture then sprinkle with cheese. Bake for 10-15 mins until golden and bubbling. Serve with sour cream.
