Layered Coffee Cream
- 250 grams cream cheese
- 4 eggs
- 1/4 cup caster sugar
- 1/2 cup sour cream
- 2 teaspoons vanilla essence
- 1 tablespoon coffee powder
- 1 tablespoon caster sugar
- 2 cups hot water
- 200 grams biscuits packet Lady Finger
- Carefully separate eggs.
- Beat egg yolks and sugar together in a small bowl with electric mixer until pale and creamy. Add chopped cream cheese, sour cream and vanilla and beat until smooth; transfer to a large bowl.
- Beat egg whites until soft peaks form and fold into cream cheese mixture.
- Combine coffee, extra sugar and hot water in a bowl, stir until dissolved. Dip biscuits into coffee mixture, one at a time, and place a layer of biscuits into a serving dish. Pour half the cream cheese mixture over biscuits, top with another layer of biscuits dipped in coffee mixture; pour remaining cream cheese mixture over biscuits. Top with another layer of biscuits dipped in coffee mixture and refrigerate overnight.
- Decorate with cream and grated chocolate and dust with sifted cocoa.
