Riso Verda(Green Rice)
- 1 1/2 c. chopped spinach
- 1 c. chopped green onions
- 1 c. chopped fresh parsley
- 3 1/2 c. chicken broth
- 2 c. rice
- 2 Tbsp. olive oil
- 2 Tbsp. butter
- 1/4 tsp. black pepper
- 1 tsp. salt (optional)
- 1/2 c. Parmesan cheese (fresh shredded is best)
- In a large skillet, add butter, olive oil, spinach, onions, parsley, salt and pepper.
- Saute for 5 minutes.
- Add rice and 1/2 of the chicken broth.
- Cook for 10 minutes.
- Add remainder of chicken broth and simmer for 20 minutes.
- Just before serving, add Parmesan cheese on the top.
- Cover until it melts then serve. This dish can be prepared the night before and it is still wonderful.
- Excellent with all meats and seafood!!!
