Guacamole With Apple And Mezcal

  1. Add the apple, mezcal, and lemon juice to a bowl. Let everything sit for 40 minutes.
  2. Add the walnuts to a skillet on medium heat. Toast the walnuts and season with a small amount of salt, about 5 to 10 minutes. Set aside.
  3. Add the oil to the skillet on medium heat. Add the chile pepper and saute for 10 minutes. Remove from the heat and allow it to cool.
  4. Add the chile pepper to a food processor with the onion and parsley (save a bit of parsley for the end).
  5. Add the avocado into the mixture and puree until smooth,
  6. Add the apple and the half of the walnuts and puree again.
  7. Add to a bowl and top with remaining walnuts and parsley.
