Guacamole With Apple And Mezcal
- 1 apple cored and chopped
- 1 tablespoon mezcal
- 1 lemon
- 1/4 cup walnuts chopped
- salt
- 1 tablespoon vegetable oil
- 1 chile pepper Serrano
- 2 tablespoons onions chopped
- 2 tablespoons fresh parsley minced
- 1 avocado pitted and flesh removed
- Add the apple, mezcal, and lemon juice to a bowl. Let everything sit for 40 minutes.
- Add the walnuts to a skillet on medium heat. Toast the walnuts and season with a small amount of salt, about 5 to 10 minutes. Set aside.
- Add the oil to the skillet on medium heat. Add the chile pepper and saute for 10 minutes. Remove from the heat and allow it to cool.
- Add the chile pepper to a food processor with the onion and parsley (save a bit of parsley for the end).
- Add the avocado into the mixture and puree until smooth,
- Add the apple and the half of the walnuts and puree again.
- Add to a bowl and top with remaining walnuts and parsley.
