Peanut Butter & Honey-Chipotle Chicken Kabobs
- 1/3 cup skippy natural creamy peanut butter spread with honey
- 1/3 cup apricot preserves
- 1 tablespoon apple cider vinegar
- 1/8 teaspoon ground chipotle chile pepper
- 2 tablespoons water
- 2 tablespoons chives chopped, divided
- 2 green bell pepper, sliced
- 1 pound boneless, skinless chicken thighs
- 24 cherry tomatoes
- Microwave Skippy(R) Natural Creamy Peanut Butter Spread with Honey and apricot preserves in microwave-safe measuring cup or bowl 30 seconds or until melted; stirring once. Stir in water, vinegar, chipotle pepper and 1 tablespoon chives. Reserve 1/3 cup for dipping.
- Alternately thread chicken, green peppers and cherry tomatoes on 12 skewers*. Grill or broil, turning occasionally and brushing frequently with peanut butter sauce, 15 minutes or until chicken is thoroughly cooked.
- Arrange kabobs on platter, then sprinkle with remaining chives and serve with reserved sauce.
