Butter Chicken
- 1/4 cup butter
- 2 teaspoons olive oil
- 1 onions diced
- 1 2/3 pounds chicken thighs boneless, quartered
- 4 cloves garlic crushed
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground ginger
- 3 teaspoons garam masala
- 3/4 cup tomato puree
- 1/3 cup cream
- 2 teaspoons sugar
- 1/2 cup greek yogurt
- Handful cilanto, for garnish
- 1/4 cup pistachios roughly chopped, for garnish
- jasmine rice Steamed, to serve
- naan to serve
- Heat butter and oil in saucepan over medium-high heat. Add onion and cook for 5 mins. Add chicken and cook for 3 mins.
- Add garlic, chili powder, cumin, coriander, ginger and garam masala and stir to coat chicken with spices. Cook for 2 mins. Stir in tomato puree, cream and sugar and bring to a simmer, then reduce heat to medium-low and simmer gently for 10 mins, or until chicken is cooked through.
- Remove from heat and stir in yogurt. Season to taste. Spoon into serving bowls and garnish with cilantro and pistachios. Serve with rice and naan bread.
