Harvest Muffins

  1. Grease mini muffin pans.
  2. Preheat oven to 350 degrees. Combine apples, carrot and sugar and set aside.
  3. In a separate bowl, combine remaining dry ingredients.
  4. To dry mixture, add egg, vanilla, and oil and mix well.
  5. Stir in apple mixture.
  6. Add coconut, raisins, and pecans.
  7. Fill muffin cups 3/4 full with batter.
  8. Top each muffin cup with 1 teaspoon of topping.
  9. Bake at 350 degrees for 20 minutes.
  10. Let muffins cool completely and then drizzle with glaze.
