Fluffy Tangerine And Almond Cake

  1. Preheat oven to 180 degrees Celsius.
  2. Whisk the egg whites with a pinch of salt to stiff peaks. Set aside.
  3. Beat the butter and sugar to a soft, white dough. Add the flour, baking powder, tangerine zest, and juice. Beat well.
  4. Add two tablespoons of the beaten egg whites, and gently mix, to loosen the dough. Add the remaining beaten egg whites, and use a spoon to gently mix upwards, without beating.
  5. Place the dough in a greased and floured bundt pan. Sprinkle with almond flakes and powdered sugar.
  6. Bake for about 30 minutes.
