Fluffy Tangerine And Almond Cake
- 8 egg whites
- salt
- 9/16 cup butter
- 1 1/8 cups sugar
- 1 cup flour
- 1 teaspoon baking powder
- 2 tangerines juice
- 1 tangerine zest
- almond flakes
- powdered sugar
- Preheat oven to 180 degrees Celsius.
- Whisk the egg whites with a pinch of salt to stiff peaks. Set aside.
- Beat the butter and sugar to a soft, white dough. Add the flour, baking powder, tangerine zest, and juice. Beat well.
- Add two tablespoons of the beaten egg whites, and gently mix, to loosen the dough. Add the remaining beaten egg whites, and use a spoon to gently mix upwards, without beating.
- Place the dough in a greased and floured bundt pan. Sprinkle with almond flakes and powdered sugar.
- Bake for about 30 minutes.
