Spicy Prawn And Avocado Salad
- 1 avocado peeled, stone removed and chopped
- 1 papaya small, deseeded, peeled and chopped
- 3 celery sticks chopped
- 5 spring onions trimmed and sliced
- 1 red onion peeled and thinly sliced
- 2 tablespoons fresh lime juice about 1 lime
- 3 drops Louisiana Hot Sauce
- 1 teaspoon sugar
- 1 clove garlic crushed
- 1 teaspoon paprika
- 2 tablespoons chili oil
- 1 tablespoon sunflower oil
- 4 shrimps jumbo, head and vein removed
- fresh cilantro to garnish
- Mix the avocado, papaya, celery, spring onion and red onion together. Mix the lime juice, hot sauce, sugar, garlic, paprika, chili oil and salt together. Divide the salad ingredients between 2 plates and drizzle with dressing.
- Thread the shrimp on skewers. Heat the oil in a frying pan, add the skewers and fry, turning, for 3-4 mins. Add a skewer to each plate then serve garnished with coriander.
