Zesty Shrimp Tacos
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon ground cumin
- 3 lemons small
- 3 limes small
- 2 pounds shrimp shelled and deveined
- 2 tablespoons EVOO
- 10 corn tortillas
- cilantro
- radishes sliced
- lime wedges
- cotija cheese crumbled
- salsa
- In small bowl combine paprika, salt, and cumin. Thinly slice lemons and limes.
- Onto thick bamboo or flat metal skewer, thread shrimp; lemon slices; and lime slices, alternating. Brush skewers on both sides with olive oil and sprinkle lightly with seasoned salt mixture.
- Grill on medium-high 4 to 5 minutes or until shrimp are opaque, turning over once halfway through.
- Use shrimp to fill warmed corn tortillas.
- Top with cilantro, radishes, lime wedges, Cotija cheese, and salsa.
