Orange Marmalade Muffins

  1. Preheat oven to 350degrees; coat muffin cups with nonstick cooking spray.
  2. Combine the flour, bran and baking powder; stir to mix well.
  3. Add the yogurt, marmalade, egg whites and vanilla extract; stir just until the dry ingredients are moistened.
  4. Fold in thepecans or blueberries, if desired.
  5. Fill the muffin cups 3/4 full with the batter.
  6. Bake for about 15 minutes, or just until a toothpick inserted in thecenter comes out clean.
  7. Remove the muffin tin from the oven and allow it to sitfor 5 minutes before removing the muffins.
