Savoury Baked Potatoes
- 32 ounces idaho potatoes
- 2 tablespoons butter corn oil
- 2 tablespoons chives chopped
- 4 tablespoons mushrooms chopped
- 1/2 cup plain yogurt
- 4 tablespoons whole wheat bread crumbs
- 1 teaspoon poultry seasoning
- nutmeg
- pepper
- paprika
- Prepare and bake the potatoes, then let stand for 5 minutes.
- Microwave butter, chives, and mushrooms, stirring once.
- Cut the potatoes in half and scoop out the insides into a bowl; mash with a fork, stirring in the mushroom mixture, the yogurt, bread crumbs and poultry seasoning. Mix well, season to taste with pepper and nutmeg, and stuff the shells with the mixture.
- Just before serving; sprinkle the tops with the paprika. Place the potato halves in a large circle on paper towels, leaving breathing space between. Microwave 4 to 5 minutes uncovered.
