Clean Eating Salsa Pork
- 1/2 tablespoon cumin
- 1/2 tablespoon ground red pepper
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 boneless pork tenderloin about 2 pounds, trimmed of fat
- 1 tablespoon bacon fat or olive oil
- 1 yellow onion large, chopped
- 3 garlic cloves minced
- 1 cup red bell pepper chopped
- 1/2 cup frozen corn kernels thawed
- 1 jar green salsa
- 1/2 cup chicken broth
- 1/2 cup Granny Smith apple diced
- 1 mango diced
- 1/2 cup chopped fresh cilantro

- Mexican cheese Shredded

- Preheat oven to 350u0b0. To prepare pork, combine first 5 ingredients in a small bowl. Rub pork with the spice mixture. Cook the pork for 1 hour or until meat thermometer reads 155u0b0. Let it cool and then shred it.
- To prepare salsa, add bacon fat or oil to a large saute pan over medium-high heat. Saute onion and garlic for 2 minutes; add red bell pepper, corn, salsa and broth. Reduce heat to low and cook, stirring occasionally, for 20 minutes to let the flavors marry. Add the shredded pork, apple, mango and cilantro, and cook 5 more minutes. Top with cilantro and any other toppings you like.
