Goan Mackerel
- 4 mackerel cleaned
- vegetable oil or sunflower
- lime wedges to serve
- 5 cloves
- 1/2 teaspoon cumin seed
- 1/2 tablespoon black peppercorns
- 6 red chillies dried
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground turmeric
- 1 tablespoon paprika
- 1/2 tablespoon salt
- 5 garlic peeled
- 2 inches fresh ginger piece, roughly chopped
- 1 shallot chopped
- 3 tablespoons white wine vinegar
- To make the masala grind the cloves cumin pepper and chillies to a powder in an electric grinder.
- Process with remaining ingredients to form a paste.
- Preheat the oven to 190C/ 375P/Gas Mark 5. Make three or four deep diagonal slits across the body of each mackerel on each side.
- Rub the paste inside the fish and then outside making sure it gets right down into the slits.
- Heat a thin layer of oil in a roasting tin over the hob.
- Fry the mackerel until browned on both sides.
- Transfer to the oven and cook for a final 10 minutes.
- Serve with lime or lemon wedges.
