Caramel Nut Candy(Microwave)
- 28 caramels
- 1/4 c. butter or margarine
- 2 Tbsp. half & half cream
- 1 1/2 c. confectioners sugar
- 1 c. salted peanuts
- 2 c. miniature marshmallows
- 1-2 c. flaked coconut
- Place caramels, butter, and cream in a 2 quart microwave safe dish.
- Microwave uncovered on medium for 2 minutes; stir. Microwave 1-3 minutes more, stirring every minute until smooth. Stir in sugar until smooth.
- Add peanuts.
- Gently fold in marshmallows, sprinkle coconut on a 10x5-inch strip onto 2 sheets of waxed paper; spoon caramel mixture down the center of coconut. Using the waxed paper coat caramel with coconut and roll into 2-10inch logs.
- Discard waxed paper.
- Wrap logs in plastic wrap and chill for 4 hours.
- Remove plastic wrap.
- Cut logs into 1/2-inch slices.
- Store in air-tight container in the refrigerator.
