Spanish Tortilla With Salami And Sweet Potatoes
- 2 tablespoons olive oil
- 10 1/2 ounces sweet potato peeled, thinly sliced
- 1 red onion thinly sliced
- 3 1/2 ounces salami thinly sliced
- 3 1/2 ounces baby spinach
- 8 eggs lightly beaten
- 1 1/2 ounces cheddar cheese grated
- salad to serve
- toasted baguette to serve
- Preheat broiler.
- Heat oil in a deep, 8 inch ovenproof frying pan over high heat. Saute sweet potato slices for 4-5 mins, until tender. Set aside. Add onion and salami. Saute for 2-3 mins, until onion is tender. Arrange sweet potato slices and spinach over onions. Pour eggs over top. Season. Shake pan gently, allowing egg to seep through cracks. Sprinkle with cheese.
- Cook over low heat for 5-6 mins, until base and sides are set. Transfer to oven and broil for 8-10 mins, until top is set and cheese is golden. Let rest for 2 mins. Serve in wedges with salad and toasted baguette.
