Tropical Salmon Three Ways
- 1 1/3 pounds salmon Norway
- 7 15/16 tablespoons granulated sugar
- 5 1/2 tablespoons fine salt
- 5/8 cup lemongrass
- 2 9/16 tablespoons fennel seed
- 4 tablespoons coriander seed
- 1 1/4 teaspoons star anise
- 11/16 ounce cinnamon stick
- 5/8 cup coconut Shredded Dehydrated
- 1 3/8 tablespoons vodka
- 2/3 tablespoon malibu
- 1 lemon In Juice
- 1 lime In Juice
- 3 1/3 tablespoons ginger
- 3 tomatoes
- 6 asparagus pc Green
- 6 3/4 tablespoons extra-virgin olive oil
- 2 1/8 cups fish stock
- salt
- pepper
- 6 3/4 tablespoons white wine
- 9/16 cup spring onions
- 1 tablespoon shallots
- 9/16 tablespoon garlic
- 12 lime leaves
- balsamic vinegar Reduced
- Mix lemon and lime juice, add chopped ginger, shallots, garlic, salt and pepper, finish with extra virgin olive oil. Peel Tomatoes and cut into a small dice; blanch the asparagus and cut in slices.
