Flourless Pistachio Cookies

  1. Preheat the oven at 350 f , 175 C.
  2. In a food processor, grind your oatmeal until it become flour. Or just buy oatmeal flour if you can.
  3. Now crush the pistachio in food process or, or just chop it by hand (that's what I did, better flavor than grinding by food processor).
  4. In a small bowl mix flax seeds with water.
  5. In a medium bowl, combine pistachio, flax seeds mix, oatmeal flour, and coconut oil, and mix them very well.
  6. Add rose water, and baking soda, cardamom, and mix again with a spatula. Shape the dough into cookies shape.
  7. On non-stick baking sheet, put your cookies, and put the sheet in the oven for 10 minutes or until it brown and still soft in the middle. Let the cool completely
  8. In a microwave bowl or in water bath, melt your chocolate, dip the cookies an line then on a sheet, and again let them cool completed, until the chocolate hardens.
