Flourless Pistachio Cookies
- 3 tablespoons crushed pistachio
- 2 tablespoons coconut oil
- 8 tablespoons flour oatmeal
- 1 tablespoon flax seeds + 3 Tb water
- 1/4 teaspoon baking soda
- 1/4 teaspoon rose water
- 1 pinch cardamom optional
- white chocolate for dipping, optional
- Preheat the oven at 350 f , 175 C.
- In a food processor, grind your oatmeal until it become flour. Or just buy oatmeal flour if you can.
- Now crush the pistachio in food process or, or just chop it by hand (that's what I did, better flavor than grinding by food processor).
- In a small bowl mix flax seeds with water.
- In a medium bowl, combine pistachio, flax seeds mix, oatmeal flour, and coconut oil, and mix them very well.
- Add rose water, and baking soda, cardamom, and mix again with a spatula. Shape the dough into cookies shape.
- On non-stick baking sheet, put your cookies, and put the sheet in the oven for 10 minutes or until it brown and still soft in the middle. Let the cool completely
- In a microwave bowl or in water bath, melt your chocolate, dip the cookies an line then on a sheet, and again let them cool completed, until the chocolate hardens.
