Fish And Mussels In Sparkling Wine
- 2 tablespoons extra-virgin olive oil
- 1 1/2 pounds mussels black, cleaned
- 1 1/4 pounds white fish fillet firm, cut into 4 pieces
- 1/2 cup dry white wine sparkling
- 1 large tomato peeled and coarsely chopped
- 2 tablespoons fresh flat leaf parsley chopped
- 4 cloves garlic finely chopped
- 1/4 teaspoon chili flakes
- crusty bread to serve
- Bring 2 cups water and oil to a boil. Simmer for 1 min then add remaining ingredients (except crusty bread). Season to taste then bring to a boil again. Reduce heat to low and simmer, covered, for 12-15 mins. Carefully transfer fish to serving bowls. Discard any unopened mussels then spoon mussels and liquid over fish. Serve with crusty bread.
