Chalupas
- 1 lb. ground beef or turkey
- 1/2 medium onion, chopped
- 1 Tbsp. chili powder
- 1 tsp. cumin
- salt and pepper to taste
- 1 can chili beans
- 3 Tbsp. shortening
- 12 corn tortillas
- shredded lettuce
- 3/4 lb. Cheddar cheese
- 3 fresh tomatoes, diced
- bottled taco sauce
- Heat lightly greased skillet.
- Add ground beef or turkey and onion.
- Cook until meat is browned.
- Drain off grease.
- Add seasonings and mix thoroughly.
- Blend in beans and their liquid. Cover and simmer for about 30 minutes.
- Heat shortening in a skillet.
- Fry tortillas for 1 minute on each side.
- Drain on absorbent paper.
- You may wrap tortillas in foil and heat in oven until warm.
