The Best Banana Cream Pie Recipe
- 1 pie crust baked
- 3/4 cup semi sweet chocolate chips
- 2 cups whole milk
- 1 tablespoon vanilla
- 1/2 cup sugar
- 1/4 cup cornstarch
- 4 egg yolks
- 1/2 teaspoon salt
- 4 tablespoons butter softened
- 3 bananas {ripe}
- 3/4 cup toffee
- 1 1/2 cups heavy cream
- 1/2 cup powdered sugar
- Melt chocolate chips in 15 second increments until smooth. Spread into the bottom of your pie crust and allow to cool.
- In a saucepan over medium heat, combine milk and vanilla, whisking for 3 minutes.
- In a large mixing bowl, combine sugar, cornstarch, yolks and salt.
- Gradually blend milk into your sugar mixture, careful not to curdle the egg.
- Return mixture to saucepan and whisk continuously until thick {about 4 minutes}.
- Whisk in butter. Remove from heat and fold in banana. Pour into pie crust.
- Top with toffee crumbles, saving a little to garnish.
- In a large mixing bowl, beat heavy cream until stiff. Gradually blend in powdered sugar and top pie. Chill 2 hours.
