Spicy Hominy Stew
- 2 pounds boneless pork loin cut into 1/2-inch cubes
- 1 teaspoon vegetable oil
- 2 cloves garlic minced
- 1 onion large, diced
- 30 ounces hominy drained
- 32 ounces navy beans drained
- 10 ounces tomatoes & chiles
- 12 ounces diced green chiles drained
- 1 tablespoon ground cumin
- 1 tablespoon ground black pepper
- 2 tablespoons chili powder
- 2 teaspoons dried oregano
- salt to taste
- cilantro chopped, to garnish
- In a large Dutch oven or deep skillet with lid, brown pork cubes, onion and garlic in oil over medium-high heat. Add remaining ingredients except salt and parsley; cover and simmer one hour. Taste and adjust seasonings for salt. Serve hot garnished with cilantro.
