Frosted Cran-Orange Salad Muffins

  1. Sprinkle cranberries with sugar, set aside. Peel 2 oranges, chop up and set aside. Squeeze the other oranges to make 2/3 cup of juice. Combine the juice, cream cheese, and vanilla. Beat until fluffy. Stir in chopped oranges, cranberries, apples and dates. Set aside.
  2. Whip cream until soft peaks form. Fold into cream cheese mixture. Spoon mixture into muffin pans lined with paper baking cups. Cover and freeze until firm. To serve, remove paper cups and place on top of firm lettuce leaves. Garnish with whipped topping.
