Applesauce Cake
- 1 c. shortening
- 1 1/2 c. sugar
- 1/2 c. brown sugar
- 1 egg
- 3 c. sifted flour
- 2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1/4 tsp. cocoa
- 2 tsp. vanilla
- 2 c. applesauce
- 1 c. chopped nuts
- whipped cream (optional)
- In a bowl, cream the shortening until light.
- Gradually beat in the sugars.
- Beat in egg.
- Sift together flour, baking soda, salt, cinnamon, nutmeg and cocoa.
- Stir vanilla into applesauce. Add sifted ingredients and applesauce alternately to the creamed mixture, mixing after each addition.
- Add chopped nuts.
- Pour into greased 9 x 13 x 2-inch pan.
- Bake for 1 hour at 325u0b0.
- Cool in pan on cake rack.
- (Whipped cream topping is optional.)
