Sweet Potato Latke Turkey Burger
- 1 1/2 pounds sweet potatoes Pealed And Shredded
- 3 scallions Thinly Sliced
- 2 eggs Free-Cage Organic, Lightly Beaten
- 1/2 cup almond meal
- 4 teaspoons fine grain sea salt
- 1/2 teaspoon ground black pepper
- 1 pound ground turkey
- 2 tablespoons dijon mustard
- 1 garlic clove Minced
- 2 tablespoons almond flour
- 1 cup cranberry sauce
- 1/4 cup fresh orange juice
- 1/3 cup honey
- 2 tablespoons Sriracha
- 4 tablespoons low sodium soy sauce
- 8 lettuce leaves Organic
- 1/2 cameo apple Thinly Sliced
- 1 cup mozzarella cheese Shredded
- 4 pearl onions White, Sliced
- 12 sage leaves Fresh
- 1 organic tomato Sliced
- Preheat oven to 400u0b0F (200u0b0C), coat two baking sheets with olive oil.
- Turkey Patties.
- In a large bowl using a fork gently combine ground turkey with scallion, almond flour, mustard and garlic.
- With dampened hands gently form 1-inch-thick patties.
- Sweet Potato Latkes
- In a large bowl combine scallions, eggs, almond flour, salt and pepper and mix until incorporated
- Add sweet potatoes, and toss until combined and evenly coated.
- Drop 1/2 cup of potato mixture onto the baking sheet, and with the help of a spatula flatten and shape into large flat discs. Repeat to obtain desired number of big latkes (2 per burger)
- Sweet And Sour Cranberry Sauce
- In a food processor add cranberry sauce, orange juice, honey, sriracha and soy sauce.
- Mix until all the ingridients fully combine.
- Save the sauce in the fridge until serving time.
- Cooking.
- Cook patties on medium high on a grill pan until cooked through, about 10 minutes per side. (Simmer for the first 5 minutes)
- Place the latkes in the oven and Bake for 30 minutes, flipping halfway through. I recommend to rotate the baking sheet a couple of times to get an even crispiness.nhe latkes are ready when they have a nice golden color and are bit burned around the edges.
- On a frying pan add olive oil, white pearl onions and fresh sage and cook on medium low until onions are golden, stir often to prevent burning the onions and the sage.
- Serving.
- Place a sweet potato latke on a plate, add lettuce and tomatoes.
- Cut the turkey pattie in half (horizontaly) and add mozzarela chesse to the middle.
- Place the pattie on top of the tomatoes, spread 1 TBsp of sweet and sour cranberry sauce.
- Add the onions and sage.
- Add some slices of apple.
- Top with the other sweet potato latke.
