Honey Mustard Chicken With Cashews And Veggies

  1. In a large skillet, heat oil over medium-high.
  2. Add chicken and garlic and cook until chicken is cooked through.
  3. Add cashews, peppers and snow peas, and cook until tender.
  4. Remove chicken and veggies, and place on serving dish.
  5. Add chicken broth to pan, and whisk in sour cream, Dijon and honey to the juices in the skillet, and heat until warmed through.
  6. Pour sauce over chicken mixture and toss to combine.
