Surprise Breakfast Coffee Cake
- 1/2 c. packed light brown sugar
- 2 tsp. plus 1/3 c. butter or margarine, softened
- 1/2 tsp. cinnamon
- 10 fig bars, crumbled
- 1 1/2 c. flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2 eggs
- 3/4 c. sugar
- 1 tsp. vanilla
- 1/2 c. milk
- Mix brown sugar, 2 teaspoons soft butter, cinnamon and crumbled fig bars; set aside.
- Mix flour, baking powder and salt.
- Beat eggs until frothy; beat in sugar and 1/3 cup melted butter until well combined.
- Add vanilla and milk.
- Beat in flour mixture until well combined.
- Pour half of mixture into greased and lightly floured 9 x 9-inch pan.
- Spread half of fig mixture over cake batter and top with remaining cake mixture and fig mixture.
- Bake at 350u0b0 for 30 to 35 minutes.
- (The blueberry and apple bars are good too!)
