Liver With Mashed Potatoes, Apples And Onions
- 2 1/4 pounds potatoes peeled
- 4 onions peeled and sliced into thin rings
- 6 tablespoons plain flour
- 4 slices liver about 150g each
- 8 tablespoons butter
- 2 apples cored and cut into wedges
- 7/8 cup semi-skimmed milk
- 1 pinch grated nutmeg
- curly parsley Fresh, for garnish
- Cook the potatoes in boiling salted water for 20 mins, or until tender.
- Sprinkle the onions with 2 tbsp flour and tap off any excess. Roll the liver in 4 tbsp flour and tap off any excess. Melt 2 tbsp butter in a frying pan and saute the liver for 2-3 mins on each side. Season with salt and black pepper, remove from the pan and keep warm. Melt 3 tbsp butter in the hot pan and fry the onions and apples for 4 mins, turning.
- In a saucepan, heat the milk and 3 tbsp butter. Drain the potatoes, add the milk mixture and mash. Season with salt and nutmeg.
- Arrange the liver and mashed potatoes on serving plates and top the liver with the apples and onions. Garnish with parsley.
