Kick-Off Brussels Sprouts Kale Salad With Tuna Dressing
- 4 cups Brussels Sprouts
- 1 1/2 cup shredded carrots
- 1 1/2 cup fresh kale leaves (chopped)
- 1/3 cup dried cranberries
- 1/3 cup dried blueberries
- 1/4 cup chopped clemantines (peeled)
- 1 tbsp lemon juice
- 1/2 mixed nuts
- 1 organic canned tuna
- 3 tbsp low fat mayo
- 1 tsp coconut oil
- 1 tsp olive oil
- 1 tbsp mustard
- A pinch of cayenne pepper
- 1/2 tsp cinnamon
- 1/2 tsp ground ginger
- 2 tbsp agave nectar or maple syrup
- 1tsp apple cider
- Thoroughly wash the Brussels sprouts
- Using a food processor, shred the Brussels sprout and pour in a bowl
- Add shredded carrots, chopped kale, dried cranberries, dried blue berries, and chopped clementines
- Add a table spoon of lemon juice.
- Use a fork to crumble the tuna in a small bowl and set aside
- In another bowl, combine mayo, coconut oil, olive oil, mustard, cayenne pepper, cinnamon, Apple cider vinegar, ginger, agave nectar and mix together.
- Add the crumbled tuna into the mixture and mix together.
- Dish out your desire amount of salad and pour some dressing and mix together.
- Sprinkle some mixed nuts and enjoy!
