Spanish Chicken Curry With Rice

  1. Preheat a deep pot on medium high
  2. Cut your onions ( small dice ), cut cloves of garlic into smaller pieces & start sauteing, then add your small dice tomatoes to your pot .
  3. Add water to your pot when tomatoes have soften and let it boil.
  4. When pot has started to boil, add your pieces of chicken , add peeled potatoes and add the rest of the seasonings ( ground annatto, dried basil, dried oregano, turmeric , ground black pepper and SALT. Let it boil for 5 mins, then bring down to a simmer and finally add your carrots ( sliced ) & raisins. Let this simmer for 15 mins and add frozen peas and let boil for 5 mins.nhis curry is fully cooked when potatoes are tender on the outside and chicken is soft, or you can use a thermometer and chicken should be 160 degrees fahrenheit.
  5. In a different deep pot cook rice. Ratio is 1:2 For each cup of rice its 2 cups of water.
  6. Now you can serve a piece of chicken with rice on the side.
