Perfect & Easy, Foolproof Meringue Recipe

  1. Oven temperature:n-3 hours meringue - set your oven for 100 C.nvernight meringue - set your oven for 60 C lowering the temperature for 50 C when you go to bed.nnPrepare a metal bowl (it will help you to get your meringues stiff - do not use a plastic bowl) you can use a pot if you do not have a metal bowl.nlean it well and dry it. You can cut a lemon in half and us it as well to wipe the inside of the bowl grease free. Dry well with a paper towel.
  2. Start with beating your egg whites on medium/high speed for 2 minutes and then on highest speed and slowly tablespoon by tablespoon add your sugar until there is no sugar left. The process should take you about 3 minutes (total of 5 minutes). Do not do it any longer since you could over beat them. nou should end up with stiff and silky peaks of meringue ready to go to the oven.
  3. Pit a backing sheet on your baking try and with two tea spoons spoon your glossy meringues into small stiff peaks. Place them immediately in the oven.nhis amount usually takes up 3 baking trays and they are fine to bake together in one go.
  4. You will end up with beautiful crunchy meringue prepared to be decorated or to be put in an Eton mess or just in a bowl served for your guests or as a treat for yourself.
  5. TIP: if you like them chewy as some of my friends do just leave the meringue in the oven for a shorter time (1 - 1 1/2 hour) nnEnjoy.
