Stir-Fried Broccoli And Beef
- 2 tsp. dry sherry
- 1/8 tsp. black pepper
- 2 tsp. soy sauce
- 1/2 tsp. salt
- 1/2 tsp. sugar
- 2 tsp. cornstarch
- 1/4 c. peanut oil
- 3/4 lb. broccoli flowerets, stalks cut diagonally into 1/4-inch slices
- 1/2 lb. flank steak, cut in thin slices across grain and cut into 1 1/2-inch strips
- Mix first 5 ingredients and 1/2 cup water.
- Set aside.
- Mix cornstarch with remaining 1/4 cup water; set aside.
- Heat 2 tablespoons oil in uncovered wok at 300u0b0.
- Add broccoli stalk slices, cover; cook 2 minutes.
- Add flowerets; cover, cook 2 minutes or until tender-crisp.
- Remove broccoli to hot platter. Add remaining 2 tablespoons oil to wok; heat at 375u0b0.
- Add meat; stir-fry 1 minute.
- Add soy sauce mixture; stir-fry 2 minutes. Return broccoli to wok; mix.
- Add cornstarch mixture.
- Stir until slightly thickened.
- Serve immediately.
