Black Rice (Forbidden) Salad & Vinaigrette

  1. Cook the black rice as you would cook any other rice. Add the condiment to taste. Cook the rice on low heat, with the lid on, until it dries.note: nook the black rice beforehand so that it can cool, off before make the salad.
  2. While the rice cook, make the vinaigrette. In a small bowl, whisk together all ingredients. Set aside.
  3. In a large bowl, combine handful watercress, cherry tomatoes. Add the cooked rice, red cabbage, cucumber, radishes and avocado.
  4. Drizzle with vinaigrette, toss and enjoy!
