Hot Fish Potato Salad
- 1 lb. fresh fish fillets, cut in 1-inch chunks
- 6 slices cooked bacon, crumbled (reserve bacon fat)
- 1/2 c. sliced celery
- 1/2 c. chopped onion
- chopped parsley
- 3 Tbsp. sugar
- 1 Tbsp. flour
- 1/2 tsp. paprika
- 1/4 tsp. salt
- 1/4 tsp. celery seed
- 1/2 c. wine vinegar
- 1 c. water
- 3 c. sliced cooked potatoes
- Saute celery and onion in bacon fat until tender; combine sugar, flour, paprika, salt and celery seed.
- Stir mixture into sauteed vegetables.
- Add vinegar and water gradually.
- Cook until thickened, stirring constantly.
- Add potatoes, bacon and fish; mix lightly, cover and cook over low heat for 10 minutes until fish flakes easily when tested with fork; sprinkle with parsley.
