Hot Fish Potato Salad

  1. Saute celery and onion in bacon fat until tender; combine sugar, flour, paprika, salt and celery seed.
  2. Stir mixture into sauteed vegetables.
  3. Add vinegar and water gradually.
  4. Cook until thickened, stirring constantly.
  5. Add potatoes, bacon and fish; mix lightly, cover and cook over low heat for 10 minutes until fish flakes easily when tested with fork; sprinkle with parsley.
