Annie Chun'S Spicy Rice Noodle Salad
- brown rice noodles Annie Chun's Maifun
- 1 red pepper
- 1 radish
- 1 onion
- 1/3 carrot
- 4 pieces curly chicory
- cilantro for garnish
- 1 handful peanuts
- 2 tablespoons hot sauce Annie Chun's Gochujang
- 1/2 tablespoon vinegar
- 1/2 tablespoon lemon juice
- Slice onion, radish, carrot and red pepper
- Combine the vinegar, lemon juice and Gochujang together to make dressing and set aside
- Cook rice noodles in a boiling water (about 2 - 4 minutes) according to package directions and drain the water. Set aside to cool
- Mix the cooked and cooled noodles with the dressing
- Combine with onion, radish, and red pepper
- Garnish with cilantro and crushed peanuts
- Enjoy!
