Smoky Lentil Chili
- 1 slice bacon
- 1 medium carrot chopped
- 1 rib celery chopped
- 1/2 small onion chopped
- 2 cloves garlic minced
- 1 cup tomatoes ground
- 1 cup water
- 1 teaspoon cumin
- 1 1/2 teaspoons chili powder
- 1 teaspoon paprika
- 1 bay leaf
- 2 teaspoons brown sugar
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 3/4 cup lentils cooked
- In a medium saucepan, saute bacon over medium heat until crispy.
- Add carrot, celery, and onion to the pan and saute for 10 minutes until vegetables begin to soften. Add garlic and stir for 30 seconds.
- Add ground tomatoes, water, cumin, chili powder, paprika, bay leaf, brown sugar, salt, and pepper. Bring mixture to a boil. Reduce heat to low, cover, and allow mixture to simmer for 30 minutes.
- Stir in lentils and cover. Cover and cook an additional 15 minutes.
