Smoky Lentil Chili

  1. In a medium saucepan, saute bacon over medium heat until crispy.
  2. Add carrot, celery, and onion to the pan and saute for 10 minutes until vegetables begin to soften. Add garlic and stir for 30 seconds.
  3. Add ground tomatoes, water, cumin, chili powder, paprika, bay leaf, brown sugar, salt, and pepper. Bring mixture to a boil. Reduce heat to low, cover, and allow mixture to simmer for 30 minutes.
  4. Stir in lentils and cover. Cover and cook an additional 15 minutes.
