Mom'S Apple Loaf
- 2 1/4 cups spelt flour
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon nutmeg
- 1/4 cup coconut oil refined
- 2 tablespoons chia seeds
- 1 cup brown sugar packed
- 2 tablespoons maple syrup
- 1/2 apple large, chopped
- 1/2 cup unsweetened applesauce
- 10 tablespoons water
- Preheat oven to 350 degrees.
- In a large bowl, whisk together the flour, salt, baking soda, baking powder, cinnamon, ginger and nutmeg. Set aside.
- In another large bowl, whisk together the chia seeds, brown sugar, maple syrup, coconut oil, water, applesauce and apple. Add wet ingredients to dry and mix until just combined.
- Scrape batter into a greased loaf pan and bake for 50 minutes or until a toothpick comes out clean. Let loaf cool completely before removing from pan.
