Pork And Cabbage Goulash
- 2 tablespoons butter
- 2 1/4 pounds pork lean, cut into small chunks
- 2 onions sliced
- 4 1/4 cups pork stock
- 5 juniper berries crushed
- 1/2 teaspoon ground allspice
- 1 3/4 pounds cabbage shredded
- 2 1/4 pounds potatoes
- 2 tablespoons honey
- 2 tablespoons creme fraiche or sour cream
- Melt the butter in a frying pan and cook the pork in batches until lightly browned. Remove pork from the pan. Add the onions to the pan and saute for 5 minutes.
- Return the meat to the pan with the stock, juniper and allspice. Bring to a gentle simmer and cover. Cook gently for 45 minutes or until the meat is very tender.
- Stir in the cabbage and cook for a further 20 minutes. Meanwhile, cook the potatoes in boiling salted water for 20 minutes or until tender. Stir the honey and creme fraiche or sour cream into the meat juices and season to taste. Serve with the potatoes.
