Meatloaf With Tomatoes And Basil
- 1 roll stale bread
- 1 tablespoon sunflower oil plus extra to grease
- 1 onion finely diced
- 1 pound ground beef
- 1 pound ground pork
- 2 tablespoons wholegrain mustard
- 1 medium egg
- 1 tablespoon tomato puree
- 3 tablespoons thyme leaves finely chopped
- 1/4 pound goat cheese chopped
- 1/2 pound cherry tomatoes
- 1 tablespoon basil pesto
- 2 tablespoons basil finely chopped
- To make the meatloaf mixture, soak the bread in lukewarm water for 1 hour. Heat the oil in a frying pan, add the onion and saute for 2-3 mins. Squeeze out the bread then place in a large mixing bowl with the meat, onion, mustard, egg, tomato puree and thyme. Knead until smooth and season. Preheat the oven to 350u0b0F.
- Transfer the meatloaf mixture to a greased loaf pan and press down. With your thumb, make indentations in the top of the loaf and insert pieces of goats cheese. Bake for 30 mins, then place the tomatoes on top and return to the oven for another 20-25 mins. Spread a little pesto on the tomatoes and sprinkle with basil to serve.
