Apple And Sage Pork Meatballs

- 1 cooking apple skin off, grated
- 1 teaspoon salt
- 2 teaspoons paprika
- 2 teaspoons dried sage
- 1 teaspoon sea salt
- 1 red onion Medium
- 1 garlic clove
- 1 large egg
- 15/16 cup ground almonds
- 1 teaspoon ground pepper
- 1/2 lime
- tahini OPTIONAL:, for dressing
- Pre-heat oven to 170u0b0c
- On to a plate place the ground almonds and pepper and mix together (this will be used later)
- In to a food processor place pork mince, grated apple, salt, paprika, dried sage, red onion, garlic clove and large egg and blitz until fully combined
- With clean hands, roll in to balls (about 1tbsp per ball) then transfer to the ground almond / pepper mix and roll carefully until coated (this is v important as this will keep them held together when frying)
- Place on to a baking sheet / plate
- Over high heat place a deep frying pan with 2 tbsp coconut oil, allow to melt
- Place balls in to the pan gently and fry off on each side until golden brown
- Once golden brown place in to the oven for approximately 15 minutes until fully cooked through
- Serve on a bed of wilted kale, butternut squash with a drizzle of tahini dressing and a squeeze of lime
